Cooking W/ Chef Farmer
This recipe will feed one or two people and on if you have a larger family.
Oven Baked Salmon
You will need:
-1lb salmon filet or salmon steak (there tends to be bones in the steak)
-Kosher sea salt or any high quality salt to taste
-Freshly ground black pepper to taste
-Good Extra Virgin Olive Oil. Try not to buy a store brand. Spend a bit more and that will
greatly improve the outcome
-Fresh thyme or flat leaf parsley (optional) to taste
Steps:
1.Set the oven for 375 degrees.
2.Season each salmon filet or salmon steaks with salt and pepper on both sides, add herbs to taste.
3.Drizzle a nice amount of EVOO on the salmon.
4.Place in a low rimmed sheet pan or cookie sheet.
5.Place seasoned salmon on a sheet pan and bake for
10 minutes or 15 minutes for a thicker cut of salmon.
6.Take salmon out and tint with foil for 5 mins.
Pair with Summer Tomato Salad
You will need:
-Four or five vine ripened organic tomatoes washed really well and chopped
-Two to three cloves of garlic finely chopped, more if you love garlic and less if you don't
-Chopped fresh organic basil, I say six or seven leaves
-Red pepper flakes (optional)
-Good EVOO and good salt and freshly ground pepper
Steps:
Mix all the ingredients in a bowl and adjust seasoning to taste.
